Professor Elyce Gamble

Biography

Elyce is a Registered Dietitian Nutritionist based in Utah who is dedicated to helping others develop a positive and sustainable relationship with food. As part of her master's program at Brigham Young University, she researched the causes and implications of food insecurity, and became passionate about helping others obtain access to healthy food. After graduating with her master's degree, she worked in clinical pediatrics at Primary Children's Hospital in Salt Lake City in both the inpatient and outpatient settings, including the Newborn Intensive Care Unit (NICU). She started a private practice nutrition consultation business called Pink Nutrition where she helps clients create sustainable health and nutrition habits and build a positive relationship with food. Elyce also facilitates a weekly eating disorder support group at Brigham Young University. She serves as the secretary for the Utah Academy of Nutrition and Dietetics. She began teaching at UVU as an adjunct professor in August of 2024, transitioned to a lecturer role in August of 2025, and assumed a tenure-track position in January of 2026.
